The Campus Cookbook: Mini- Me Pizzas


A Mouthful of Wholesome Goodness

Simply throw in your desired toppings and pop them in the oven! These mouth-watering mini pizzas are chock-full with minced meat,carrots, tomatoes and melted cheese. Amaze your family with these classic home-made bites that are simple to make and tastes delicious too.


2 English muffins
Pasta sauce of your choice
Parmesan or cheddar cheese shavings
4 cherry tomatoes, sliced
Minced beef
1 onion, diced
3 baby carrots, peeled and sliced
A handful of baby spinach leaves


Step 1: Preheat the oven to 180degC.

Step 2: To make the minced beef sauce, heat up the frying pan and add in the diced onions. Cook till onions brown. Season the raw minced beef with salt and pepper and cook the meat till it browns.

Step 3:  Now add in the pasta sauce and mix well with the minced beef.

Step 4: Add in the washed baby spinach leaves, turning the heat down low and let it simmer for 2 minutes.

Step 5: To prepare the mini pizza bases, slice the English muffins into half horizontally and place them face up on the table top. Pour a generous serving of the beef sauce onto each muffin.

Step 6: Boil the sliced baby carrots till soft and tender. Drain the hot water. Now add the soft carrot slices to each muffin. Chop up the cherry tomatoes and add them on top of the carrot slices.

Step 7: Sprinkle the Parmesan cheese shavings over each muffin.

Step 8: Place the 4 mini pizzas into the oven for 15 minutes or till the cheese melts. Now it’s ready to eat!
